A.j.'s Southwestern Meatloaf

Ingredients

900 gr beef
30 gr onion
18 gr green pepper
3 gr salt
1 d cayenne pepper
75 gr kernal corn
2 green onions
1 southwest seasonings ajo
55 gr bread crumbs
2 eggs
120 ml pace picante sauce
22 gr green chilis
120 gr monterey jack cheese
34 gr black olives
240 ml chili sauce

Instructions

** I used 1 teaspoon of Schilling Mexican seasoning as a substitution for the Ajo Picante seasoning -it tasted just fine. ** Preheat oven to 350 degrees. In a large bowl, combine the ground beef, onion, green pepper, garlic, salt, cayenne pepper, frozen corn, green onion, Ajo Picante seasoning, bread crumbs, eggs, picante sauce, green chilies, cheese, olives and chili sauce. Mix well with your hands. Place into a greased 9by 13 cm loaf pan and bake for about 1 to 1.5 hours, until meat is no longer pink and juices run clear.
