Apple-Nut Muffins


1 egg
160 ml apple juice
120 ml vegetable oil
4 gr vanilla
250 gr flour
50 gr sugar
55 gr brown sugar
14 gr baking powder
1 gr salt
100 gr nuts
1 apple


In bowl, beat egg with juice, oil and vanilla. Stir in flour, sugars, baking powder, and salt just until flour is moistened. (will be lumpy) Stir in nuts and apple. Fill prepared muffin tins. (greased or paper lined.) Sprinkle with cinnamon sugar. Bake at 200ÂșC for 20 minutes or until golden brown. From Domino Back of the Box.
