Apple Cranberry Muffins

Ingredients

220 gr all purpose flour
100 gr sugar
7 gr baking powder
2 gr baking soda
1 gr salt
1 egg
180 ml milk
180 ml sweetened applesauce
55 gr butter
1 cranberries coarsely
5 gr all purpose flour
1 gr cinnamon

Instructions

In medium bowl, combine 1.75 cups of flour, quarter cup sugar, the baking powder, baking soda and salt. In small bowl, combine egg, milk, applesauce and butter, mix well. Add egg mixture to flour mixture, stirring just until moistened. Batter will be lumpy. In small bowl, toss cranberries with 2 tb flour, fold into batter. Spoon batter into dozen greased 6 cm muffin cups. In another small bowl, combine quarter cup sugar and the cinnamon. Sprinkle over muffins. Bake in preheated 400 oven 20-25 mins or until wooden pick inserted in center comes out clean. Remove from pan; cool on wire rack. Western New York Apple Growers Assn.
