Apricot Bars

Ingredients

130 gr flour
75 gr brown sugar
3 gr cinnamon
2 gr baking powder
1 gr salt
400 gr apricots
8 gr walnuts
8 gr cashews
110 gr maple syrup
200 gr icing sugar
24 gr shortening
2 gr vanilla
16 ml apple juice

Instructions

Sift together flour, sugar, cinnamon, baking powder & salt. Stir in the apricots & nuts. Add the syrup. Stir until the mixture forms a thick batter. Spread the batter into a lightly oiled 20 cm X 20 cm baking pan (it is hard work, but it will cover -trust me!). Bake at 180ÂșC for 30 to 35 minutes or until the bars test done. Allow to cool slightly, cut into bars. When completely cool, spread with icing & drizzle some melted chocolate over the top if desired. ICING: Cream together sugar & shortening. Add remaining ingredients & beat until smooth. Makes half cup. Recipe by Mark Satterly
