Athenian Couscous Salad
Ingredients
160 gr couscous
1 ripe tomato
2 green onions
1/2 cucumber
14 gr parsley
110 gr feta cheese
60 ml lemon juice
38 ml olive oil
3 gr oregano
1 gr salt
10 grinds black pepper
Instructions
a small jar. Cover and shake well to blend. Pour over the salad, mixing well. 4. Refrigerate; bring the salad to room temperature before serving.
