Authentic Pennsylvania Dutch Shoo Fly Pie

Ingredients

120 ml baking molasses
1 egg yolk
2 gr baking soda
180 ml boiling water
95 gr flour
110 gr brown sugar
9 gr butter
1 gr nutmeg
1 gr ginger
1 gr cinnamon
1 gr salt
1 pastry

Instructions

Dissolve soda in boiling water and add to egg and molasses. Set aside. Stir dry ingredients together, mixing well. Cut in shortening until mixture looks like coarse crumbs. Pour molasses into pie shell. Sprinkle crumbs evenly over top. Do not stir. Bake at 230ÂșC or 15 minutes then reduce heat to 350 degrees and bake 20 minutes longer. Cool and serve.
