Baked New Potato Salad With Peanuts And Mustard Dressing
Ingredients
65 gr skinned peanuts
575 gr potatoes
16 ml olive oil
1 gr salt
16 ml rice vinegar
40 gr onion
1 slice carrot
2 slices ribs celery
120 ml mayonnaise
120 ml low fat yogurt
3 gr cilantro
16 ml grainy mustard
16 ml dijon mustard
1 gr cumin
725 degree oven
Instructions
bowl. Stir together the mayonnaise, yogurt, cilantro, mustards, cumin and several grindings black pepper. Combine with the vegetables and refrigerate. Stir in the peanuts just before serving.
