Baked Zucchini Boats

Ingredients

4 zucchini
120 gr rice
1 onion
1 garlic
1 egg
30 ml oil
230 gr beef
55 gr bread
475 ml spaghetti sauce
14 gr dill
3 gr parsley
10 gr parmesan cheese

Instructions

Split zucchini lengthwise, scoop out seeds. Saute ground beef, onion, garlic, dill, and parsley in olive oil. Remove from heat. Add cooked rice, beaten egg, quarter c bread crumbs and mix well. Fill zucchini with mixture and place in a baking dish. Cover with spaghetti sauce, sprinkle cheese and remaining bread crumbs on top.

Cover and bake at 180ÂșC or approximately 45 minutes, until zucchini is tender but firm.
