Bean Curd Skin Rolls

Ingredients

1 chili pepper
5 gr ginger
3 gr shallot
16 ml vinegar
7 ml soy sauce
5 ml dark soy sauce
3 gr sugar
4 ml sesame oil
7 ml water
4 black chinese mushrooms
4 bean curd cake
1 celery stalk
1/4 carrot
1 gr salt
40 either
1/4 filling mixture onto bean curd skin
