Berry Pecan Cornbread

Ingredients

85 gr silken tofu
425 ml soy milk
120 ml cranberry-apple juice
80 gr maple syrup
9 gr vanilla
220 gr cornmeal
65 gr unbleached flour
1/4 potato starch
9 gr baking powder
5 gr baking soda
1 gr salt
32 gr sesame seeds
1 1/2 tart cherries
3/8 pecans

Instructions

Preheat oven to 180ÂșC . Blend tofu with next 4 ingredients with a fork. Combine with cornmeal, flour, starch, baking powder, soda & salt; mix well & set aside for 10 minutes. Fold in sesame seeds, dried cherries or cranberries & pecans. Pour into an oiled loaf pan & bake 45 minutes. "Vegetarian Times" December, 1993
