Black Bean Nacho Gratin

Ingredients

600 gr black beans
150 gr corn
1 zucchini
1 gr pepper
11 mild salsa
60 gr monterey jack cheese
12 gr tortilla chips

Instructions

Pre-heat oven to 400 degrees. Grease dozen inchX6 inch baking dish. Combine black beans, corn, bell pepper, zucchini and pepper. Spread half of the bean mixture in a baking dish. Spoon half the salsa over the bean mixture. Sprinkle with half crushed tortilla chips, then half the grated cheese. Repeat the layers with remaining bean mixture, salsa, chips and cheese. Cover with foil. Bake until cheese is melted and vegetables are tender, about 20 minutes. Remove from the oven. Position rack 5 cm-3 inch from heat source. Pre-heat broiler. Remove foil. Broil until lightly browned, about 5 minutes Ready to serve in 35 minutes ~-
