Black Eyed Beans With Basil Sambuca Dressing

Ingredients

1 garlic clove
1 lemon
5 ml balsamic vinegar
30 ml sambuca liqueur
4 gr basil
3 gr black pepper
400 gr black-eyed peas
1/2 onion
1/2 bell pepper
8 gr basil

Instructions

Combine ingredients for dressing. Mix with sald ingredients & rest at least half an hour before serving. Season if desired. Adapted from "The Hamilton Spectator" August, 1993
