Botvinia

Ingredients

1 cucumber
90 gr spinach leaves
90 ml frsh lemon juice
50 gr sorrel leaves
45 gr horseradish root
3 gr salt
3 gr sugar
130 gr crab meat
1 1/2 poached sturgeon
2 pcs
1 1/2 poached whitefish in
1 scallions
30 gr onion
1 garlic clove
55 gr vodka
1,400 ml beer
1 1/2 kvas see recipe attached

Instructions

Boil 3 litre of water in a large pan. When boiling briskly add the spinach and the sorrel. Cook uncovered at a brisk boil for 6-8 minutes. drain water off, wash vegetables in cold water, then puree in blender. cool to room temperature. Combine the other ingredients in bowl, except for the beer and vodka. When mixed well slowly add the beer and the vodka stirring constantly. Chill for a minimum of 2 hours before serving.
