Bran-raisin Muffins

Ingredients

190 gr shreds of wheat bran cereal
85 gr raisins
120 ml boiling water
1 egg
240 ml buttermilk
60 ml vegetable oil
160 gr all purpose flour
130 gr sugar
6 gr baking soda
1 gr salt
1 gr nutmeg
12 muffn

Instructions

let stand 2 minutes. Beat egg in 2.5-quart bowl; stir in buttermilk, oil and cereal mixture. Stir in remaining ingredients, all at once, just until flour is moistened (batter will be lumpy). Fill muffin cups about 0.75 full. Bake until golden brown, about 20 minutes. Immediately remove from pan. About 1 dozen muffins;190 calories per muffin. *If using self rising flour, omit baking soda and salt.
