Breton Apple Pie

Ingredients

130 gr butter
200 gr sugar
16 gr dark rum
4 gr vanilla
4 egg yolks
350 gr unbleached all-purpose
1 gr egg salt butter
9 springform
1 at time
1/2 dough in
1 up sides
9 disk on cardboard
2 golden delicious apples
100 gr sugar
45 gr butter

Instructions

tablespoons lemon juice 2 tablespoons dark rum Peel, core and slice apples into large saucepan. Add sugar, butter, lemon juice and rum. Cook, covered, until apples exude juices. Remove cover. Reduce heat and cook until juices evaporate. Cool before using. Note: To freeze, chill cake. Wash pan and line with plastic wrap. Ease cake into pan, right side up. Double wrap with plastic wrap. Label and freeze. ----
