Canadian Cottage Cheese Cake

Ingredients

240 gr fine rusk crumbs
45 gr melted butter
38 gr sugar
2 gr cinnamon
1 filling
475 gr cottage cheese
5 eggs
65 gr flour
400 gr sugar
4 gr lemon rind
30 ml lemon juice
2 gr vanilla
240 ml cream
750 gr strawberries
32 gr cornstarch
60 ml orange juice
12 gr orange rind

Instructions

Combine crust ingredients and press into a 23 cm springform pan and bake 180ÂșC or 10 minutes and cool. For filling: press cheese through sieve into a bowl. Add eggs one at a time. Beat in flour and sugar. Stir in rind and juice and vanilla. Whip cream and fold in. Pour into crust. Bake 350 1 hour and 10 mins or until set. Cool and chill. For topping: Blend berries to puree. add sugar and cornstarch with juice and rind. Cook thick and clear. Place whole berries over chilled cake. Pour on warm glaze and chill until set. ----
