Canterbury Jumbles

Ingredients

95 gr vegetable shortening
65 gr butter
1 stick
400 gr firmly packed dark brown
2 eggs
120 ml buttermilk
9 gr vanilla
450 gr flour
5 gr baking soda
3 gr salt
80 gr unsweetened flaked coconut
140 gr macadamia nuts coarsely
250 gr raisins
700 gr semisweet chocolate chips

Instructions

Preheat oven to 400�. In a large mixing bowl, bet the shortening, butter and brown sugar together until smooth. Beat in the eggs, then stir in the buttermilk and vanilla. Blend the flour, baking soda and salt together in a small bowl, stir the flour mixture into the butter mixture until incorporated. Stir in the coconut, nuts, raisins and chocolate chips. Drop by leavel half-tablespoons onto greased cookie sheets. Bake for 7-10 minutes, until the cookies are puffed and slightly brown. Cool on a rack. The cooies keep well in an airtight tin.
