Caramel Apple Cake

Ingredients

350 ml vegetable oil
300 gr sugar
220 gr packed brown sugar
3 eggs
375 gr flour
5 gr cinnamon
1 gr nutmeg
5 gr baking soda
1 gr salt
350 gr apples
120 gr walnuts
9 gr vanilla
80 ml cream
55 gr butter
1 gr salt
200 gr confectioners sugar

Instructions

In mixing bowl, combine oil and sugar. Add eggs, one at a time, beating well after each addition., Combine dry ingredients; add to batter and stir well. Fold in apples, walnuts and vanilla. Pour into a greased and floured 25 cm tube pan. Bake at 160ÂșC or 1.5 hours or until cake test done. Cool in pan 10 minutes; remove to a wire rack to cool completely. In the top a double boiler over simmering water, heat brown sugar, cream, butter and salt until sugar is dissolved. Cool to room temperature. Beat in confectioners sugar until smooth; drizzle over cake. Sprinkle with nuts if desired.
