Caribbean Rice

Ingredients

240 gr rice
180 gr mandarin oranges
240 gr pineapple
65 gr pepper
60 gr slivered almonds
40 gr unsweetened coconut
40 gr green onions
34 gr mango chutney
1 gr ginger

Instructions

Combine rice, mandarin oranges, pineapple, red pepper, almonds, coconut, green onions, chutney and ginger in large skillet over medium-high heat. Stir and cook until ingredients are blended and thoroughly heated. Serve with grilled or broiled shrimp. *To toast coconut, spread grated coconut on an ungreased baking sheet and toast at 150ÂșC . for 1 minute.
