Caribou Steaks With Whisky Sauce

Ingredients

28 gr butter
34 gr shallots
5 cranberries
60 ml scotch whiskey
180 ml orange juice
30 ml lemon juice
32 gr currant jelly
5 ml dijon mustard
5 gr cornstarch
30 ml water
4 caribou steaks

Instructions

Combine 1 tablespoon. butter, shallots and berries in a sauce pan. Cook over med. heat until shallots soften. Add Scotch whiskey and heat until just boiling. Stir in orange juice, lemon juice, jelly and mustard. Heat until boiling. Combine cornstarch with water. Stir into sauce; cook until thickened and set aside. In a frying pan melt the remaining 1 tablespoon. butter and saute the steaks. Do not overcook. Serve immediately with sauce.
