Carrot Muffins

Ingredients

300 gr sugar
300 ml corn oil
3 eggs
375 gr flour
9 gr baking powder
7 gr baking soda
1 gr salt
5 gr cinnamon
260 gr carrots

Instructions

Preheat oven to 170ÂșC . Cream sugar and oil, add eggs one at a time, beat well after each. Add dry ingredients and mix well. Stir in carrots, pour into prepared pans and bake 20 -25 minutes or until center springs back when touched. This recipe is from Noah' Restaurant on Laurier Ave. and was requested by a client.
