Carrot Zucchini Cake

Ingredients

2 egg
190 gr carrot
200 gr sugar
130 gr zucchini
160 ml oil
20 gr coconut
95 gr flour
5 gr baking powder
5 gr baking soda
3 gr cinnamon
2 gr salt
1 package cream cheese
55 gr butter
2 gr orange rind
400 gr icing sugar
4 gr vanilla

Instructions

CAKE: Preheat oven to 180ºC . Grease & flour 23 cm pan. Beat eggs with sugar till frothy. Gradually beat in oil. Combine dry ingredients, add to 1 st mixture in large bowl & beat together till mixed (batter will be thick). Add carrots, zucchini & coconut. Beat. Pour into pan. Bake at 180ºC for 30 min. Frost when cool. ICING: Beat cream cheese (room temp) & butter together till creamy. Beat in icing sugar, vanilla & orange rind till creamy. Spread. posted by Anne MacLellan
