Filling Mix crumbs, quarter cup of the sugar and butter. Press into 13 x 23 cm baking pan. Bake at 160ºC for 10 minutes. Mix cream cheese, remaining 0.75 cup sugar and vanilla with electric mixer on medium speed until well blended. Add eggs; mix just until blended. Pour over crust. Bake at 160ºC for 35 minutes or until centre is almost set. Cool. Refrigerate 3 hours or overnight. Top with pie filling. Cut into squares. Garnish, if desired. Makes 18 servings.
