Chicken Blackberry Vinegar

Ingredients

1/2 blackberries
240 ml vinegar
2 nbsp
2 chickens
170 ml vinegar
12 demi-glace
160 gr butter
2,300 gr beef
1,300 gr chicken
1/2 celery
1 carrot
2 onions
1 bay leaf
4 garlic
1 gr thyme
160 gr tomato

Instructions

Blackberry Vinegar: Soak the blackberries in the vinegar for 3 hours, then pass the mixture through a food mill. Discard the seeds.Chicken: Saute the chicken and then remove it from the pan. Drain off the fat and deglaze the pan with blackberry vinegar. Add the chicken and demi-glace. Bring to a boil. Finish with butter. Remove chicken to serving plates and cover with sauce.
