Chocolate Marble Cheesecake/tvfn

Ingredients

250 gr cottage cheese
120 gr neufchatel cheese
3 eggs
14 gr sugar
14 gr vanilla extract
7 ml strained lemon juice
1 gr salt
16 gr unsweetened dutch processed
1 gr instant coffee
20 gr graham cracker crumbs

Ovenproof baking dish or skillet, at least 28 cm in diameter and 5 cm deep. 20 cm cardboard cake circle or pan bottom, optional* (2 percent) low-fat small curd cottage cheese*" one third Less Fat than Cream Cheese" Neufchatel Cheese (Kraft in the box is good-don't buy the kind in the tub) Position rack in lower third of oven and preheat to 350 degrees. Place a round of parchment paper in the bottom of the cake pan, and spray sides of pan with vegetable oil spray. Put water kettle on to boil. Process the cottage cheese in a food processor for 2.5 to 3 minutes or until silk smooth, scraping the sides and bottom of the bowl once or twice as necessary. Set aside. SEE PART 2 ----
