Chocolate Zucchini Rum Cake

Ingredients

400 gr sugar
3 eggs
260 gr zucchini
80 gr rum
2 1/2 all
120 gr walnuts
240 gr semisweet chocolate bits
45 gr cocoa
12 gr baking powder
7 gr baking soda
2 gr cinnamon
3 gr salt
60 ml milk

Instructions

Beat butter and sugar until smooth. Add eggs, one at a time. Stir in zucchini and rum. Mix together flour, walnuts, chocolate, cocoa, baking powder, baking soda, cinnamon, and salt. Stir flour mix and milk into egg mix. Put in well buttered and floured 25 cm tube pan or ridged pan. Bake 350 50-55 minutes. Cool in pan on rack 15 minutes. Invert and remove. Let cool. Rum glaze: 1.6666666666667 cup powdered sugar and 3 Tb rum or water mixed together. ----
