Classic Mole Poblano Sauce

Ingredients

4 pasilla chiles
4 mexican chiles
1 onion
2 garlic
2 tomatoes
16 gr sesame seeds
60 gr almonds
1/2 corn tortilla
40 gr raisins
1 gr cinnamon
1 gr coriander
40 gr shortening
240 ml chicken broth
32 gr bitter chocolate

Instructions

-taste) Combine chiles, onion, garlic, tomatoes, 1 Tablespoon sesame seeds, almonds, tortilla, raisins, cloves, cinnamon, and coriander. Puree small amounts of mixture in a blender until smooth. Melt shortening in a skillet and saute the puree for 10 minutes, stirring frequently. Add chicken broth and chocolate and cook over very low heat for 45 minutes. The sauce should be very thick.
