Confetti Potato Casserole

Ingredients

80 ml water
28 gr butter
1 onion
425 gr cubed potatoes
65 gr bell pepper
2 pimiento
1 gr salt
1 gr pepper
55 gr cheddar cheese
3 slices bacon

Instructions

Combine potatoes and water in a 2 litre casserole. Cover and microwave at HIGH power 8 to 10 minutes or until potatoes are tender, stirring after 4 minutes. Drain; add butter, stirring until butter melts. Add onion, bell pepper, pimiento, salt, and pepper. Bake at 190ÂșC or 25 minutes; sprinkle with cheese and bacon.
