Cottage Cheese Muffins

Ingredients

190 gr flour
2 gr baking powder
2 gr baking soda
1 gr salt
55 gr margarine softened
170 gr packed brown sugar
1 egg
120 gr lf cottage cheese
60 ml skim milk

Instructions

1. In med. bowl, combine flour through salt.

2. In large bowl, cream together margarine and sugar. Beat in egg. Add cottage cheese and milk until smoth. Add dry ingredients and stir just until moistened.

3. Fill sprayed muffin tins 0.75 full, and bake at 190ÂșC for 20 mins.
