110 gr butter 8 l leeks 65 gr flour 1/2 cream 375 gr brie cheese 2 chives 55 gr butter in a soup kettle over hea leeks
Instructions
batches, stirring until cheese melts and mixture is smooth. Strain through fine sieve. Return to saucepan. Add leek puree and heat through. Season with salt to taste. Ladle into soup bowls and garnish with ground pepper and chives. Serves 6.
