Creamed Turnip Soup

Ingredients

1 turnip greens
3 gr shallots
2 ml olive oil
240 ml cream
2 peppercorns
60 ml wine
30 gr parmesan

Instructions

-cheese Salt and pepper to taste Blanch turnip greens, then submerge in ice water and drain. Lightly saute shallots in olive oil. Add cream, peppercorns and white wine. Reduce by half and strain.
