Curried Lentils & Vegetables

Ingredients

2 dry lentils
200 gr carots
100 gr celery
6 gr curry powder
3 gr salt
950 ml water
180 gr onions
5 gr gingerroot
350 ml lo fat yogurt
2 gr snipped parsley

Instructions

Rinse lentils and drain. In a Dutch oven combine lentils, water, carrots, onoins, celery, garlic, curry powder, ginger (or use quarter t ground ginger), and salt. Bring to boiling; reduce heat. Cover and simmer for 30 minutes or till lentils are tender. In a medium mixing bowl stir together yogurt, tomato, and parsley, if desired.
