Curried Oysters With Banana Salsa

Ingredients

26 gr curry powder
55 gr butter
2 shallots
2 garlic
2 fish fumet
475 ml cream
20 wellfleet oysters
2 whitefish trimmings
85 gr mushrooms
1 carrot
1 slice onion
1 oyster liquor
240 ml wine
950 ml water
1 bay leaf
3 gr peppercorns
1 gr fennel seed
2 sprigs parsley
2 gr thyme
4 bananas
2 serrano chiles
30 ml corn oil
30 ml line juice
2 cilantro
1 gr mint
12 gr tamarind paste
50 gr bell pepper
1/2 dice
60 gr remains
