Curried Tofu Salad Sandwich

Ingredients

45 ml lowfat mayonnaise
5 ml dijon mustard
1 gr turmeric
1 gr curry powder
240 gr firm tofu lowfat
65 gr carrots
2 wheat pita breads in

Instructions

In a bowl, combine mayo, mustard, turmeric and curry powder. Gently stir in tofu, carrots and onion. Add salt and pepper to taste and toss to combine. Chill.

Spoon into pita pockets and serve.
