Curried Vegetable Stew

Ingredients

some garlic
260 gr garbanzo beans
950 ml water
240 gr onions
2 potatoes
2 slices carrots
1 cauliflower
200 gr peas
240 ml tomato juice
10 gr ginger
2 gr coriander
2 gr cumin
3 gr turmeric
1 gr cinnamon
1 gr cayenne
30 ml tamari soy sauce

Instructions

Recipe by: McDougall Place beans and water in a large pot. Bring to a boil, remove from heat, cover and let rest 1 hour. Return to heat and simmer 1.5 hours. Then add onion, garlic, potato, carrots, tomato juice,and all the spices. Continue to cook over medium heat 30 min. Then add cauliflower, cook 20 min. and finally add the peas and cook for 10 minutes more. Serve over rice or another whole grain.
