Danish Aebleskivers

Ingredients

95 gr wheat flour
65 gr all purpose flour
95 gr unbleached all purp
9 gr baking powder
1 gr salt
14 gr sugar
2 eggs
240 ml milk
2 bananas

Instructions

-peaches, well drained -(optional) powdered sugar Stir together flour, baking powder, salt and sugar. Mix egg yolks and milk together well. Add this mixture to the dry ingredients. Stir until just blended. Beat egg whites until stiff and fold them into batter. Heat aebleskiver pan. Spoon half teaspoon oil into each section and fill two third full with batter. Cook over medium heat until bubbles appear. Turn with a fork or skewer and cook the other side until lightly browned. To vary flavor, add a slice of banana or peach to each section before it is turned. Dust with powdered sugar and serve with butter and jam or syrup. Makes about 28 aebleskivers.
