Date Muffins

Ingredients

150 gr cooking dates
240 ml boiling water
30 ml vegetable oil
220 gr all purpose flour
4 gr vanilla
5 gr baking soda
220 gr brown sugar
7 gr baking powder
1 gr salt
120 gr walnuts

Instructions

Combine dates, water & oil or shortening. Let cool. Combine the baking soda with the flour & mix well. Add the brown sugar, baking powder, vanilla, salt & nuts to the date mixture. Mix well. Gently fold in the flour & baking soda mixture. If too dry, add a little more water. Bake in greased muffin pans at 160ÂșC for 25 minutes, or until cooked through.
