Eggplant

Ingredients

5 ml olive oil
180 ml dry sherry
1 onion
2 garlic
26 gr celery
65 gr bell pepper
1 gr nutmeg
475 gr tomatoes
8 gr basil

Instructions

nutmeg, basil & tomatoes. Bring to a boil, lower heat & simmer, uncovered for 20 minutes. Season to taste. Serve immediately over cooked pasta. "Vegetarian Times" September, 1991
