Equal Dutch Apple Pancake

Ingredients

4 eggs
65 gr all purpose flour
2 gr baking powder
1 gr salt
120 ml skim milk
28 gr diet margarine
1 gr cinnamon

Instructions

----------------------------------FILLING---------------------------------2 tb Diet margarine 1 Tart apple; * half ts Cinnamon -----------------------------------GLAZE----------------------------------8 Equal packets half ts Cinnamon 3 tb Boiling water * Large; pared and sliced 1 cm thick Combine batter ingredients in blender or food processor; mix until smooth. Let rest 30 minutes. For filling; melt margarine in a 25 cm oven proof skillet. Add apple slices, sprinkle with cinnamon and toss over low heat for 3 minutes. Pour batter over apples and place in preheated 425^ oven for 15 minutes. Remove from oven. Blend glaze ingredients and drizzle over top of pancake. Cut into 4 wedges to serve. Makes 4 servings, quarter pancake each.
