Fancy Curry Powder

Ingredients

9 gr fenugreek
20 pods
18 gr coriander seeds
6 gr cumin seeds
16 ml mustard seeds
3 in cinnamon stick
1 gr mace
1 gr nutmeg
1 gr big cayenne
18 gr turmeric

Instructions

Hot pepper, toasted and Dried (to taste) Preheat oven to 110ÂșC . In a small pan, combine fenugreek, cardamom, coriander, cumin and mustard seeds, cloves, and broken cinnamon stick. Bake for 15 minutes, shaking the pan a few times. Let cool. In bowl, combine the toasted spices with the mace, nutmeg, cayenne, tumeric and peppers. Place in a spice mill and grind to a powder.
