Filled Lemon Cookies

Ingredients

450 gr butter
200 gr powdered sugar
500 gr all purpose flour
1 gr salt
2 lemon extract
1 filling additional powdered sugar filling
1 egg
130 gr sugar
28 gr butter
3 gr lemon rind
45 ml lemon juice
3 gr cornstarch
1 recipe by southern living
200 gr powdered sugar

Instructions

Unwrap rolls, and cut into 1 cm slices; place on ungreased cookie sheets. Bake at 200ÂșC or 8 minutes or until browned. Cool on wire racks. Spoon filling on bottom side of half the cookies, spreading evenly. Place a second cookie on top of filling, top side up, and sprinkle FILLING Combine all ingredients in top of a double boiler, stirring until blended. Bring water to a boil.
