Fish Fumet

Ingredients

575 gr fish trimmings
1,900 ml water
60 ml tarragon vinegar
2 celery stalks with leaves
2 carrots
2 leeks
1/2 head of lettuce
10 peppercorns
5 dill sprigs
3 parsley sprigs
2 bay leaves
2 gr thyme
3 gr salt

Instructions

Combine all ingredients in 4to 5 litre saucepan and bring to boil. Reduce heat and simmer uncovered 45 minutes. Strain through colander or cheesecloth-lined strainer before using. --
