Florentine Cheese Tarts

Ingredients

18 eggs
65 gr flour
26 gr sugar
220 gr cheddar cheese
240 gr cottage cheese
110 gr butter
1 onion
350 ml evaporated milk
38 gr spinach
425 gr ham
1 gr celery seed
2 ml dry mustard
1/2 bon appetit seasoning
1 gr nutmeg
16 gr flour

Instructions

Saute together ham, butter, onion, spinach, spices, and 2 tablespoons of flour; set aside. Whisk eggs, sugar, half cup of flour, and cheeses. Add ham mixture. Ladle into greasedmuffin cups. Bake for 30 minutes at 160ºC . Cool completely. Slide knife around each tart to loosen and remove from pans. Reheat on baking sheet at 160ºC for about 15 minutes. Makes about 30 tarts.
