Fresh Gingerbread With Port

60 ml lemon juice
8 firm but ripe pears w
4 ruby port
400 gr sugar
2 cinnamon sticks
1 vanilla bean
60 gr ginger
6 gr sugar
325 gr all purpose flour
6 gr baking soda
5 gr ginger
5 gr cinnamon
4 gr dry mustard powder
130 gr butter
170 gr firmly packed dk brown sugar
110 gr unsulfured
80 gr strong brewed coffee
4 eggs
240 ml buttermilk
26 gr powdered sugar
2 gr vanilla extract
1 gr ginger
1 day
32 gr sugar in bowl
1 at a time
2 1/2 squares
1 cake
1 pear on
8 plates

Instructions

Spoon some syrup over each pear. Spoon dollop of whipped cream alongside.
