Fresh Pineapple Slaw

Ingredients

500 gr pineapple
1 carrot
1 green pepper
45 ml wine vinegar
45 ml unsweetened pineapple juice
16 ml honey
5 ml oil
55 gr crumbled blue cheese

Instructions

gently. Combine vinegar, and the next 3 ingredients and stir well with a wire whisk. Pour over pineapple mixture and toss. Cover and chill 1 hour. Top with blue cheese just before serving.
