Friar's Zucchini Bread

Ingredients

3 eggs
240 ml oil
250 gr flour
1 gr baking powder
400 gr sugar
260 gr zucchini
3 gr salt
8 gr cinnamon
14 gr vanilla

Instructions

Beat eggs, oil, sugar and zucchini. Sift dry ingredients together and add to mixture. Add vanilla. Pour into 2 greased and floured loaf pans. Bake at 180ºC or 1 hour. Test tops by touching with one finger before removing from oven. Freezes excellent.
