Golden Pigeon With Winter Melon

Ingredients

600 winter melon
12 slices chinese ham
1/2 cm
2 young pigeons
1 kg chicken
4 slices ginger root
4 shallots
120 ml soy sauce
30 ml dark soy sauce
5 ml oyster sauce
4 gr salt
1 gr sugar
5 stock
12 gr cornstarch
2 tbs water
10 sprigs of flowering chives i used cornish game hens
1/2 his life in cantonese restaurant kitchens
60 cameron road
12 slices about
5 cms wide
3 cms long
2 cms
1 tbs oil
240 ml pigeon braising stock
6 overlapping winter melon on side of pigeons
