Green Curry Paste

Ingredients

2 gr cumin seeds
2 gr coriander seeds
6 green chilies
8 gr lemon grass
2 gr coriander root
8 gr shallots
8 gr garlic
3 gr galangal
7 peppercorns
3 gr salt
3 gr shrimp paste

Instructions

Place the cumin and coriander seeds in a pan, without adding any oil. Dry-fry them, stirring, for 1 to 2 minutes until they are aromatic and slightly browned.
