Grilled Pompano With Smoked Tomato And Balsam

Ingredients

600 gr pompano
4 tomatoes
2 gr basil chiffonade
12 year old balsomic

Instructions

: vinegar : salt : pepper Make 1 cm deep slits 5 cm apart on both sides of the pompano. Smoke for 1 hour at 200 degrees. Remove pompano from smoker and lightly oil and season with salt and pepper.
