Hearty Bean Soup

Ingredients

65 gr green bell pepper
30 gr onion
1 garlic clove
16 ml vegetable oil
950 gr van camps kidney beans
525 gr tomatoes undrained
400 ml single strength beef broth
350 ml tomato juice
180 gr corn
8 gr chili powder
14 gr sugar
2 gr cumin
55 gr cheddar cheese

Instructions

In 4 litre saucepan or Dutch oven, saute green pepper, onion and garlic in oil 5 to 7 minutes or until tender. Add remaining ingredients except cheese. Bring to a boil over medium-high heat. Reduce heat; simmer 10 minutes, stirring occasionally. Sprinkle each serving with 2 tablespoons cheese.
